This version uses soured oat milk, eggs, and melted dairy-free butter to keep the center tender while a hot cast-iron skillet handles the crisp edges. The leftovers hold together well enough to split, toast, and eat the next morning without making a mess of the counter.

It lands between sweet Northern cornbread and the no-sugar Southern camp. Two tablespoons of sugar help it brown and round out the cornmeal without turning it into cake. Serve a square beside dairy-free chili, pair it with dairy-free creamy potato soup, or put it on a holiday plate with dairy-free mashed potatoes. Instructions

    Heat the oven to 425 F. Place a 9-inch cast-iron skillet in the oven while it heats.

    Stir the oat milk and vinegar or lemon juice together in a measuring cup. Let the mixture stand for 10 minutes to make dairy-free buttermilk.

    Whisk the cornmeal, flour, sugar, baking powder, baking soda, and salt in a large bowl until evenly combined.

    Whisk the eggs and melted dairy-free butter into the soured oat milk.

    Pour the wet mixture into the dry ingredients. Fold just until no dry pockets remain. Let the batter stand for 5 minutes so the cornmeal can hydrate.

    Carefully remove the hot skillet from the oven. Add the neutral oil and tilt the skillet to coat the bottom and sides.

Most dairy-free butter is salted: Earth Balance and Country Crock Plant Butter both are, and 6 tablespoons of it adds up. The 3/4 teaspoon of salt in the batter already accounts for that. If you are using an unsalted dairy-free butter, add another 1/4 teaspoon.

Preheat the skillet: A hot skillet starts browning the batter on contact. If the batter does not sizzle lightly at the edge, the pan was not hot enough.

Medium-grind cornmeal works best: Fine cornmeal can make the crumb cakey, while very coarse cornmeal stays gritty in this short bake.

Do not overmix: Fold only until the flour disappears. A few small lumps are better than a tough loaf.

Skip the cast iron if needed: Grease an 8-inch square metal pan and bake at 400 F for 22 to 27 minutes. The edges will be less crisp but the center will still bake properly.

For sweeter cornbread: Increase the sugar to 1/4 cup. For a more savory version, reduce it to 1 tablespoon.

Storage: Keep covered at room temperature for 1 day or refrigerate for up to 4 days. Reheat wedges in a 325 F oven so the edges recover some crunch.
