That's the ingredient responsible for the salty, savory depth that makes the dressing taste like something instead of garlicky mayo, and it happens to be dairy-free on its own. I leaned on it here instead of trying to fake that flavor with nutritional yeast alone, so this dressing hits the same umami note as the real thing. You won't be missing anything by skipping the Parmesan.

In a small food processor or blender, combine the mayonnaise, garlic, anchovy paste, Worcestershire sauce, dairy-free Parmesan-style shreds, nutritional yeast, lemon juice, and Dijon mustard. Blend until smooth.

With the motor running, drizzle in the olive oil until fully combined.

Add the salt and pepper and pulse once more. Taste and adjust: more lemon juice for brightness, more anchovy paste or Worcestershire for saltiness.

Add the water 1 teaspoon at a time, blending briefly after each addition, until the dressing reaches a pourable consistency you like.
