Buffalo wings should be crisp before the sauce goes anywhere near them. Otherwise you get soft skin under a puddle of hot sauce, which is a disappointing way to spend three pounds of chicken. Drying the wings well and baking them on a rack with a little baking powder gives the skin enough blister and crunch to stand up to the sauce. This version is built for the oven, so you get the payoff without hauling out a pot of frying oil.
The buffalo sauce is the familiar combination of Frank's RedHot Original and melted dairy-free butter. Making it yourself matters because bottled wing sauces can contain real butter or milk ingredients. Serve the wings with dairy-free ranch dressing and celery, then add dairy-free buffalo chicken dip or dairy-free loaded nachos if you're feeding a game-day crowd. Toss the wings right before serving. Mix the baking powder, salt, garlic powder, and black pepper in a small bowl. Pat the chicken wings very dry with paper towels, then toss them with the seasoning mixture until every piece has a thin, even coating.

Arrange the seasoned wings in a single layer, uncovered, on a wire rack set over a rimmed baking sheet. Refrigerate for at least 1 hour or up to overnight. The salt draws moisture to the surface and then back into the meat, which seasons the wings more evenly and dries the skin at the same time.

Heat the oven to 425 F. Line a second rimmed baking sheet with foil and set a wire rack over it. Lightly coat the rack with cooking spray if the wings tend to stick.

Arrange the wings in a single layer on the prepared rack with space between them. Bake for 25 minutes, flip each wing, and bake for 20 to 25 minutes more, until the skin is browned and crisp and the thickest pieces reach 175 to 185 F.
